Yeah your username is stored on the server, not your ps3. So just create a new user and put in your email address and password.
To transfer all your saved data from one ps3 to another, go to system settings and check out "data transfer utility". All DLCs can just be re-downloaded once you log in to your username from your new ps3. You can do this up to 5 times per DLC.

as long as you remember all your passwords and setup info yep and it keeps records of all the games you download i upgraded my hard drive thats how i know make sure you sync your trophies on the o;d one to the ps3 server if you didnt im not sure if they will come along but you will lose your saved game files if you cant save them to transfer to your new one

Do the ethernet transfer method, so once you have your new ps3. Find a standard ethernet cable not a crossover and directly (no routers needed) connect your old ps3 with your new. And head to the backup menu and select the transfer utility if I am not mistaken, but it should be pretty straight forward. But once the content is transferred to your new ps3 then everything on your old will be deleted, that's why they call it a transfer, bc a copy would hurt Sony's money machine. Plus this is the best slash official way bc sony thought maybe we should make it easier to people who is buying the new ps3 slim, and want to move there content. Ohh and one last thing both of the ps3 most have the newest firmware update and they must match, so you cant do it with the old being on 3.30 and the new on 3.41 so update both of them or it will not simply work.
