Well, Final Fantasy XIII is probably going to be a 2009 title, at least in the US. However, in the RPG area, the PS3 should be getting Disgaea 3 and Valkeria this year. Disgaea 3 is, well, more of the same hijinks from the previous games. Valkeria is also a sort of strategy RPG in which you control the commanding officer of a small army unit. You can assign different roles to your soldiers such as sniper, infantry, etc.
COD4 isn't exclusive for the PS3, so that doesn't count as an exclusive.
Resistance 2 should be out this November, and looks to be better than the first game in every possible way.
Gran Turismo Prologue is also due out later this year (October?) and although it's basically just a demo of GT5, it should still provide some interest for racing fans.
Those are the only ones I can think of in addition to Mark's list.
