You control which direction to move them in using your Sixaxis controls. This is the motion sensing feature on the dualshock or sixaxis controller for the ps3, if you didn't know. :)
Also, you control your actual movement by pressing any button. Any button you press will make the wind blow you in whatever direction you're facing.

any button, including the analog sticks pointing in any direction makes the wind blow, and you steer with the motion controls, it's explained when you start the game.
