How to play online? You'll have to create a PSN id (it's easy, you'll find out when you have your PS3) and connect your internet cable or wireless internet to your PS3, just the same as you connect it to your PC. Then you should be online, easy as that.
Games well, there are plenty of games, check your local store or an online game store. I can advice Call of duty 4, great shooter especially online!
Further on a 60GB PS3 you can both play PS2 and PS1 games. You can play games, watch movies, watch pictures, surf the web, play online, visit the PS shop... Well there's a lot of things you can do.

First off, all the settings to start of with are self explanitory, ( including internet connection), nd to play online usually the game would have a link at the main menu....some good games that i recomend are, (these are mostly shooters ect) ... resistance fall of man, call of duty 4, haze, turok, warhawk, the orange box, ( half life collection), assasins creed...(some good games when they eventually come out0 crysis, metal gear solid 4, grand theft auto 4...some good racing games are need for speed nd gran tursimo, (very very good graphics) ..nd also not much of a sports collection but try golf 2008, pez 2008 (soccer), fifa street, nd some good baskatball games that i forgot the name of...
btw make sure that you have a tv that can go upto 1080p, (full hd) nd a hdmi cable so you can get full experience...i know shitloads on ps3 so if you got any other question just email me :)
